Sourcing Premium Delicacies: a buyer's guide from theGreex

Bottarga, marinated fish, sea salts and gourmet Greek specialties. A practical, category-deep guide to sourcing premium delicacies from Greek producers: origin, production, certifications, packaging, applications and buyer tips.

A curated selection of Greek delicacies, Kozani saffron, PDO honey, truffle and single-estate olive oil, presented on a dark stone board.

Overview

The premium delicacies range brings together the top of every Greek category: PDO honey, saffron from Kozani, truffle-infused specialties, aged vinegars, single-estate olive oils and gifting formats built around them.

For a buyer, this is a curated tier rather than a commodity range. It works best as a gifting programme, a specialty-store assortment or the top of the ladder in an existing Greek shelf.

History

'Delicacy' as a curated category is a modern retail construction, but each product in it has its own long history: Kozani saffron since the 17th century, PDO honey since ancient beekeeping, truffle harvesting more recent but growing fast in central Greece.

Origin

Kozani saffron (Krokos Kozanis PDO) from western Macedonia, thyme and pine honey from Crete and the north, truffles from Meteora and Grevena, single-estate olive oils from the Peloponnese and Crete.

Production

Small-batch and often single-operator. Hand-harvested saffron stigmas, single-varietal honey extraction with minimal filtration, whole-truffle preservation in oil or salt, single-estate olive oil with full traceability to the grove.

Varieties and signature products

Bottarga & Roe: Avgotaraho Messolonghiou (PDO), Grated Bottarga. Marinated Fish: Marinated Anchovies, Marinated Sardines, Smoked Trout. Sea Salts & Gourmet: Fleur de Sel from Messolonghi, Smoked Sea Salt, Herb-infused Sea Salt.

Certifications

Depending on the sub-range we work with producers holding IFS, BRCGS, ISO 22000 and FSSC 22000 food-safety certifications, alongside PDO, PGI, Organic (BIO) and Halal / Kosher where relevant to your premium delicacies programme. Certificates and specification sheets are shared before order confirmation, not after.

Packaging formats

Retail formats: jars, tins, cups or pouches sized for supermarket and specialty shelves · Foodservice formats: catering pails, larger jars and vacuum packs · Bulk options where applicable, from drums to IBCs · Private-label packaging and artwork coordinated with the producer

Retail

Consumer-ready premium delicacies in shelf-ready formats: glass jars, PET, tins, cups or vacuum packs depending on the sub-range. Suitable for supermarkets, delis, specialty grocers and gourmet gift channels across Europe, the UK, the GCC and beyond.

Foodservice (HoReCa)

Chef-grade premium delicacies in catering formats for hotels, restaurants, caterers and central kitchens. Balanced flavour profiles, consistent supply and specification sheets that make menu planning straightforward.

Bulk

Bulk premium delicacies for repackers, blenders, industrial users and downstream processors. Tank, drum, IBC and food-grade bag-in-box options where available, with certificates of analysis and traceability to the producer.

Private Label

Full private-label programmes for premium delicacies: recipe fine-tuning, packaging artwork coordination, label compliance for EU, UK, GCC and other target markets, plus MOQs that work for growing brands rather than only for the largest importers.

Export information

We export premium delicacies from Greece to buyers across the EU, the United Kingdom, the GCC (Saudi Arabia, UAE and neighbours), with active projects in Japan and North America. Shipments run ex works, FCA, FOB or CIF according to your Incoterms preference, consolidated with other Greek products where a full container is not yet on the table.

Buyer tips

For anything in this tier, insist on traceability and, where relevant, PDO/PGI certification. Gifting packaging is not optional here, plain jars sell as pantry, presentation packaging sells as gift, and the price gap between the two is significant.

Frequently asked

Buyer questions we hear most often

What is Avgotaraho Messolonghiou (Greek bottarga) and why is it PDO protected?
Avgotaraho Messolonghiou is cured grey-mullet roe from the Messolonghi lagoon, coated in natural beeswax and matured for weeks. PDO status under EU Regulation 1151/2012 restricts production to that lagoon and to traditional artisanal methods, protecting one of Greece's most distinctive fine-dining products.
How much bottarga is available in a typical production season and what are lead times?
Annual production of PDO Avgotaraho Messolonghiou is measured in a few tonnes only. We work on allocations from August, once the harvest is landed. Grated bottarga in jars from other Greek producers is available year-round for restaurants and gourmet retail with normal 3–6 week lead times.
In what formats do you supply marinated anchovies and sardines?
Marinated anchovies (gavros): PET or glass trays 100 g, 200 g and 500 g, and 1 kg foodservice tubs. Marinated sardines: 200 g and 500 g trays. Smoked trout fillets: vacuum packs of 100 g and 250 g. All are chilled products at 0–4°C with 60–90 days shelf life.
Do you supply Greek fleur de sel and how is it different from standard sea salt?
Fleur de Sel from Messolonghi is harvested by hand from the surface of shallow salt pans on hot summer days. Crystals are thin and delicate, dissolving instantly on food. It is a finishing salt, not a cooking salt, sold in 90–200 g gift-format jars and small ceramic pots for fine-dining supply.
Do you offer smoked and herb-infused sea salts for restaurant and retail use?
Yes. Sea salt smoked over Greek beechwood for grilled meats and fish. Herb-infused blends with wild oregano, thyme and rosemary from Crete for Mediterranean menus. Both are hand-blended in small batches in Greece and packed in glass tubes 60–150 g for retail, and 500 g pouches for kitchens.
How do you preserve chilled delicacies during international transport?
Chilled marinated fish moves in +2°C reefer with dual data-loggers, on sailings selected so at least 65% of shelf life remains at destination. For markets beyond four weeks of transit we prefer air freight in insulated pallets, or switch to vacuum-packed variants where the recipe allows.
Which delicacies work best for premium gifting and hospitality programmes?
Wax-coated bottarga in wooden gift boxes, fleur de sel in ceramic pots, small-batch smoked salt tubes, and marinated anchovies in decorative glass jars. Co-branded gift assortments starting at around 300 units per configuration are produced for corporate gifting and hotel amenity programmes.
Do you handle US FDA prior notice and EU import formalities for chilled fish?
Yes. FDA prior notice, HACCP Seafood documentation and the CATCH certificate for wild-caught species are prepared where required. EU shipments include the intra-community health certificate and species and origin declarations under the IUU regulation.
What minimum order quantities apply to small-batch premium delicacies?
Because production volumes are naturally limited, MOQs are set per SKU and per season. For most delicacies we can accept case-level orders as part of a wider consolidated shipment, with allocation confirmed at the time of forecast rather than at random.
