- How are Greek table olives graded by size?
- Grading follows the international count-per-kilogram scale: Kalamata typically runs from 141/160 up to 320/350, and Halkidiki from Super Mammoth 70/90 through Colossal, Super and Jumbo up to 181/200. Every shipment specifies the agreed size band and a tolerance percentage.
- What is the difference between natural, dry-cured and thermally treated olives?
- Natural olives ferment in brine over several months and retain the fullest flavour. Dry-cured (throumbes) are salt-cured with wrinkled skins and intense character. Thermally treated olives are pasteurised for shelf stability at ambient. We supply all three, chosen to match your channel and cold-chain setup.
- Are your olives supplied whole, pitted, sliced or stuffed?
- All four. Whole olives keep the classic table presentation, pitted are preferred for foodservice and salad kits, sliced are used in pizza and antipasti lines, and stuffed olives are hand-filled with almond, garlic, red pepper, cheese and other traditional fillings.
- What packaging options are available for olives?
- Retail: glass jars 200 g to 720 g, PET cups 150 g to 500 g, vacuum pouches 200 g to 500 g. Foodservice: PET jars 1–5 kg, tinplate A10 (up to 4.25 kg drained), HDPE pails 5–10 kg. Bulk: 60 kg and 220 kg food-grade drums in brine for repackers.
- Do your olives contain preservatives or added colour?
- Standard Kalamata and Halkidiki are packed in brine (water, salt, vinegar) with no artificial colour. Green olives that keep their bright colour rely on lactic fermentation and controlled brining, not on ferrous gluconate stabilisation unless you specifically request it for a black-olive line.
- How do drained weights relate to net weights on the label?
- For olives in brine the drained weight is roughly 55–60% of the net weight in retail jars and 55% in A10 catering tins. All specification sheets state both figures per SKU so you can price accurately and meet EU e-mark and FDA labelling rules.
- Can I get PDO Kalamata olives with certification per shipment?
- Yes. PDO Kalamata is protected under EU Regulation 1151/2012. Each shipment is accompanied by a PDO certificate issued by the control body naming the producer, the lot, the packing date and the tonnage covered.
- Do you offer halal or kosher olive lines?
- Yes for halal, on selected producers with Islamic Chamber halal certification for the export markets that require it. Kosher-certified lots are available on request under OU or KLBD supervision, with lead time for scheduling the inspection.
- What shelf life should I plan for on ambient table olives?
- Pasteurised olives in glass or A10 tin carry a 24-month best-before from production. Vacuum pouches are typically 12 months. Chilled fresh olives in modified-atmosphere packaging run 90 to 150 days depending on the recipe; the spec sheet always reflects the actual production lot.
