Overview

Vinegar is a small but strategic category in the Greek export basket. Wine vinegar built from Greek varietals, aged balsamic-style vinegars from the north, and infused vinegars for retail and HoReCa cover the price ladder from value cooking use to premium gifting.

History

Vinegar production tracks Greek winemaking, which is over 4,000 years old. Modern commercial vinegar in Greece grew in parallel with the wine industry's late-20th-century revival, benefiting from the same varietal renaissance.

Origin

Wine vinegar bases come from Nemea (Agiorgitiko), Naoussa (Xinomavro), Santorini (Assyrtiko) and Peloponnese (Roditis). Aged, syrupy balsamic-style vinegars concentrate in the north where the ageing tradition is strongest.

Production

Slow acetic fermentation for the base vinegars, wooden-barrel ageing for the premium tier, infusion and cold-blending for flavoured lines (honey, thyme, chilli, fig). Filtration and pasteurisation are tuned per SKU.
