A specialty that cannot be shortcut

Avgotaraho is produced only from the roe of grey mullet caught in the Messolonghi and Aitoliko lagoons of western Greece. The fish are trapped at the end of their life cycle as they attempt to return to the sea; the roe sacs are extracted, salted, pressed and coated in beeswax by a small number of licensed producers under the PDO discipline.

There is no way around that structure and there should not be. Any importer serious about avgotaraho has to accept that supply is finite, seasonal and tied to a specific ecosystem. The alternative is a look-alike bottarga from elsewhere, and buyers who care about origin will notice immediately.

How we work inside the system

The starting point is the fishery itself. Our role is to represent the international buyer respectfully to the licensed producers, understand the year's catch and roe yields, and place orders inside the discipline the PDO operates under. We do not try to negotiate around it.

Grade and format selection matter. Whole beeswax-sealed pieces are graded by size and colour; grated formats have a different application. We help the buyer choose grades that actually match their end use, from fine dining shavings to retail whole pieces, rather than the formats their marketing instinct suggests.

PDO documentation, batch coding, cold-chain paperwork and export permits all follow the producer's rules. We package this coherently for the buyer's customs and quality teams so nothing gets lost in translation on arrival.
